Thursday 25th October, 2012 - weigh in and lamb stew!

Weigh in last night and I lost 1lb :o)

Takes me back to 10st 1lb.

Above goal but within the 5lb allowance so I'm happy as it's a loss!

Mind set for a good week this week.

Just want to share last night's tea, which if I say so myself was AMAZING <3

It was my own recipe and one I will definitely be making again!

400g Lamb Leg Steak
1 large onion
2 large carrots
1 large sweet potato
1 swede
1 parsnip
2 Knorr lamb stock cubes, made to 1½ pints with hot water

Shove it all in a pan, add a sprinkle of dried rosemary and dried thyme, and simmer.
I made mine on Tuesday night ready for Wednesday so it was nice and stewed.
And since it was post weigh in I bought a big crusty loaf

Total recipe came to 37pp, so 9pp if serving 4 people :o)

Curried Butternut Squash Soup

Now that the weather has turned colder, I am trying to make more soups to fill up on and warm up with.
The bonus with soup is a lot of the time they can be  made for zero propoints!

This is one I love, and have made this week :o)

1 large butternut squash, peeled, deseeded and diced into one inch cubes
2 medium onions, quartered
2 vegetable stock cubes ,make up to 2 pints with hot water
1½ tsp curry powder
1 pinch salt, to taste
1 pinch black pepper

Preheat oven to Gas Mark 7/220°c/425°F.

Place squash and onion in a large roasting pan or baking dish. Bake, uncovered for 45 minutes, until squash is tender. Don't worry if some of the pieces get a bit browned - this will add to the roasted flavour of the soup.

Remove from oven. Tip into saucepan and add stock. Bring up to the boil, reduce heat and simmer for 15 minutes. Let cool about 15 minutes - do not pour hot soup into food processor, or you risk it exploding. Purée in batches in blender or food processor.

Toast curry powder in a small frying pan over a low heat until fragrant, about 2 minutes - be careful not to burn it. Stir into the puréed soup. Season to taste and divide between 6 bowls. Garnish with spring onions and serve.

Update 22nd October, 2012

10th October : +3½lb!! - I went a bit food-happy this week having got to goal, and obviously overdid it a lot more than I thought, as I expected maybe a 2lb gain but nothing as much as 3½!! OOOOOPS!! >_<

17th October : STS - the plan was to get back on track this week after that maHOOsive gain, but I didn't track at all this week and feel like I ate even worse than last week!
Was DREADING getting on the scales, so was seriously surprised but majorly relieved to find I'd STS!
It seems it is a sign to get my arse back into gear!

22nd October : I have done a lot better this week, though have used practically all my weeklies now (Monday)
Just need to get through munchy Tuesday and I should be home free for a small loss on Wednesday

Monday 8th October, 2012 - week 1 post goal

I've eaten too much chocolate this week.

Why is it as soon as you are given a reason to 'celebrate' it means eating and drinking everything you shouldn't?

And 'Goal' just seems like a reason to eat what I fancy.

Which is ridiculous.

And it doesn't work.

MUST  BEHAVE!!!

MUST NOT REVERT BACK TO OLD WAYS!

GOOOOOOOOOOOOOOOAAAAAAAAAAAALLLLLL!!!!!!!!!!

Wednesday 3rd October, 2012

GUESS WHAT???
Weigh in last night ....

I was a little worried, as I had SP'd and was hovering around the right weight, but I wasn't sure how it would go at official weigh in!

So I stripped off everything I could - rings, necklace, SOCKS (lol), and stood on the scales ... and they showed 9st 12lb!!

  ½lb TOO MUCH!!

But it had been flickering between the two, and I was getting to goal TONIGHT after seeing that, even if it meant taking my bra off! LOL

So I stood back on, and it said...     9st 11½lb!

FINALLY!!!

My advice to you, dear peeps, is to CARRY ON.

Just KEEP GOING.

Take each weigh in, and roll with it.

Weigh in EVERY WEEK.
ALWAYS face up to your week, good or bad.

If you dodge the scales, where will you end up?

It CAN be done. and it isn't a race.

YOU CAN DO IT!!

Tuesday 2nd October, 2012

Just a little pre-weigh in post to let you know I'm still here.

I've had a pretty good week I think :o) Still got 20 weeklies left and that was despite a 33pp lunch at my dads on Sunday!

I've had 26/26 the last 2 days, which I'm proud of to be honest, cos Monday and Tuesday are normally my difficult days, where I want to eat everything in sight!

I've had a couple sneaky peeks over the week, and the lowest I've seen is 9 st 12.5, which would mean ½lb loss, which is better than nothing!

Although I am really hoping, wishing, praying, keeping my fingers crossed, holding out for a kind week from the scales ....

just a little 1½lb ...

pretty please?

So, best behaviour tomorrow, and then just .... HOPE!
