Sweet Potato, Leek & Tomato Soup

Serves 4


Ingredients
4 Sprays Cooking Spray
2 medium (80g each) Leek, trimmed, washed and chopped roughly
pinch of salt
pinch of black pepper
1 can (400g) tomatoes, whole or chopped
850ml Vegetable Stock, cubes as required (3 oxo)
400g sweet potato, peeled and diced
4tbsp fromage frais, very low fat, plain - to serve, (optional)
2tbsp chives, fresh - to serve, (optional)

Instructions
Lightly coat a large saucepan with low fat cooking spray, add the leeks and stir to coat.

Season and add 2tbsp water. Cover the pan and sweat over a medium heat for 5 minutes until softened.

Stir in the sweet potatoes, tomatoes and stock, bring to the boil and simmer, covered, for 15 minutes or until the sweet potato is soft.

Cool slightly, then blend until smooth.

Adjust the seasoning if necessary and serve, topped with a swirl of fromage frais and a scattering of chives (optional)
